Course list
CATERING
First hand entrepreneurship and cooking techniques are what you will experience with this class. What is it like to plan, start, and run a business? You will carry out a minimum of 6 catering jobs, and determine your company's profit or loss for the semester. The underlying themes for this course are: Bakery, Deli, and Catering. Your focus will include: food safety and sanitation practices. introduction to industry equipment, basic accounting, recipe & menu pricing, as well as marketing. You will integrate these skills through learning food preparation techniques and basic culinary skills as you carry out catering jobs. Running a business will help you to hone your teamwork, communication, and customer services skills, thus increasing your marketability in the job market.
CHILD AND ADOLESCENT DEVELOPMENT
An introduction course to the Education Pathway, designed to provide an opportunity for students to acquire the knowledge, realistic expectations, attitudes, and skills that will help them become more responsible and effective when caring and working with young children. Through a variety of classroom activities students will learn skills for becoming effective future parents as well as the importance of self-care and caring for the community.
CULINARY NUTRITION
The purpose of this course is to develop lifelong, healthy individuals with an understanding of healthy and nutritious preparation techniques utilizing various resources and skills. Emphasis is place on implementing healthy nutritional choices preparing nutrient-dense season foods, sports nutrition, exploring careers related to culinary nutrition, and practicing wise consumer decisions.
FOOD SCIENCE AND NUTRITION
I
What is the hidden science in food preparation and storage? How does your diet affect your health? What career choices are available in the food sciences field? This introductory course involves concepts from a variety of sciences including biology, chemistry and physics as they relate to individual diet and health. Using basic scientific methods, students will explore the production, processing, preparation, utilization and evaluation of food. This class will enhance general math and technical writing skill through the organization, presentation, and analysis of scientific data gathered in a kitchen lab environment.

What happens to food chemically when it is cooked or prepared? What happens chemically when food is stored incorrectly? Food Science and Nutrition II is an advanced exploration of food and nutrition relative to individual health from a scientific perspective. The student will acquire a thorough knowledge of essential food nutrients and their chemical/cellular impact on the body. In addition, the student will scientifically examine the chemistry of food through kitchen lab experiences.
INDEPENDENT LIVING
The purpose of this course is to develop educated consumers with an understanding and academic knowledge of consumer resources and financial organizations. This course focuses on personal and family resources, jobs and careers, personal and family finances, and wellness.
INTERIOR DESIGN
This course focuses on career awareness and introductory skills necessary for occupations related to the field of interior design. Both residential and commercial designs are areas of focus. Technology is an important part of this course through the use of computer design programs.
INTRODUCTION TO TEACHING THROUGH TEACHER CADET PROGRAM
Students will be involved in a fast paced, innovative, hands-on curriculum where they gain knowledge about teaching and learning. The teacher cadet will develop and master effective skills that will be helpful in college and beyond such as: presentation, public speaking, writing, communication and reasoning skills. This is a yearlong honor's elective where each student will make a difference with children as they "try out" teaching in a "mini-student teaching experience".
TEACHER CADET INTERNSHIP
The Teacher Cadet Internship course is designed to provide additional field experience for those students who have completed Honors Intro to Teaching Through Teacher Cadet Program. For students who know that they want to enter the education profession, this field experience will enhance their understanding of classroom instruction and the challenges facing education today.
PROSTART
Level 1
This course is a nationally certified program that is based on the study of food preparation, lodging, customer service, and business management coupled with 1+ years of mentored industry work internships in a broad spectrum of operations.
Level 2
Business Economics
This is a project based course that develops creative, critical thinking, and transferable workplace skills by involving students in the real-life experience of starting, running and growing a business for any industry. Includes the seven economic standards required to receive the Economics credit. Using a restaurant or hospitality related business as their model, students will be involved in all phases of the start-up and operations of their business, beginning with the creative side of entrepreneur thinking, organizing, promoting, through costs and financing, purchasing inventory and equipment, managing employees and earning profits. Students will develop a business proposal for their new restaurant or hospitality related business concept. Students will prepare a written proposal, a visual proposal, a visual display and present a verbal presentation at the completion of the course.

In this highly interactive course students integrate knowledge, skills and practices required by individuals and families to develop, manage, and strengthen interpersonal, intrapersonal, adult and family relationships.
